Raspberry Muffins
Description
This raspberry muffins recipe is easy to make and super delicious. With this recipe, you will get moist and soft muffin texture and a burst of fresh raspberry flavor. You can enjoy this treat with tea or serve it to your loved ones.

Instructions
- Preheat the oven to 180°C fan-forced (200°C conventional). Line one large (18 x 80ml capacity) or three 6-hole muffins tray with large paper cases.
- Sift the flour, baking powder, bicarb and salt into a bowl. Beat the eggs and sugar in the bowl of an electric mixer until pale and thickened. With the motor running on a low speed, slowly drizzle in the oil and gradually add the flour mixture. Mix the batter until just incorporated, then add the sour cream and mix for 1 minute to ensure all the ingredients are combined.
- Gently stir in the raspberries. Spoon the batter into the prepared muffins trays dividing it evenly. Bake for 15 minutes, until risen, golden brown and springy to a gentle touch in the centre. Leave to cool in the tray for a few minutes. Serve warm or at room temperature, dusted with icing sugar, if desired.
