Banana Squares
Description
These banana squares are perfect for banana lovers. These cakes are moist and tender that melt in your mouth with sweet and creamy flavor. Enjoy this wholesome delight with tea, as a desert or at parties.

Instructions
- Preheat the oven to 180°C (350°F)/ gas 4. With a pencil, draw round the tin onto the nonstick baking parchment. Carefully cut out the square. Grease and line the tin with the nonstick baking parchment.
- Carefully cream the butter and sugar together in a large bowl until light and fluffy. Gradually beat the eggs into the creamed butter and sugar mixture.
- Sift the flour, salt, and baking powder into the creamed mixture and gently fold them in. Next, stir in the banana and buttermilk.
- Spoon the cake mixture into the prepared tin and carefully smooth the top with a palette knife. Bake the cake in the oven for 35 minutes, or until firm. Cool on a cooling rack.
- Meanwhile, carefully dry fry the coconut over a low heat until golden, stirring continuously. Tip the toasted coconut onto a plate to stop it from burning.
- Beat the cheese and icing sugar together with a wooden spoon until completely combined. It should become smooth, soft and spreadable.
- When the cake is completely cool, carefully cut it into squares. Add a spoonful of the cream cheese topping and a sprinkle of toasted coconut to each square.
