Crepes with Passionfruit Syrup

Description

This crepes with passionfruit syrup recipe is super delicious. These crepes are buttery with golden sweet syrup on top. You can serve it with vanilla ice cream or whipped cream to add extra texture and flavor.

Instructions

  1. To make the crepe batter, whisk the eggs, milk and sugar together, then gradually stir in the flour. Melt the butter in a small saucepan over medium heat until it bubbles and becomes a light nut-brown colour. Pour the melted butter into the flour mixture and whisk to incorporate.
  2. Heat a little oil in a large, heavy based, non-stick frying or crepe pan over medium heat. Holding the pan at a 45 degree angle, take a small ladleful of the crepe batter and pour it into the top of the pan. Immediately swirl the pan so the batter spreads evenly and right to the edge of the pan- it will run down the pan to form a thin, even pancake. As the pancake sets, little bubbles will appear on the surface and the base should be a light golden brown colour. Flip and cook for a further 2 minutes. Transfer the crepe to a plate and repeat with the remaining batter to make 12 crepes.
  3. For the passionfruit syrup, place a large non-stick frying pan over medium heat, then add the sugar and leave it to dissolve. When the sugar starts to turn a light-caramel colour, stir it gently to colour evenly. Remove the pan from the heat and stir in the butter. Add the passionfruit pulp, then place over low heat, stirring to combine the ingredients. Pour the syrup into a bowl, leaving 1/4 cup (60ml) syrup in the pan, then set aside.
