Lime and Coconut Cupcakes
Description
These lime and coconut cupcakes have a refreshing flavor with a tang of lime and sweetness of coconut. These cupcakes have coconut and lime flakes on top to make them look perfect for summer parties, tea time and tropical cravings.

Instructions
- Preheat the oven to 180°C (350°F)/ gas 4. Line the bun tins with 18 paper cases. Use two 12-hole bun tins (and half fill 1 of them) if you don’t have a 6-hole tin or cook the cupcakes in batches.
- In a large mixing bowl, carefully whisk the butter, sugar, and lime zest together using an electric or hand whisk until they are light and fluffy. Whisk in the eggs and lime juice.
- Using a metal spoon, fold the flour, baking powder, and coconut into the butter and sugar mixture. Divide the mixture between the paper cases. They should be about two-thirds full.
- Cook the cupcakes in the oven for 15-20 minutes until well risen and golden (cook them on the top shelf if you are cooking in batches). Carefully transfer to a cooling rack and allow to cool.
- Place two-thirds of the lime zest (saving some for decoration) and lime juice in a bowl and sift over the icing sugar. Stir until smooth, adding a little green coloring, if you are using it.
- Use a teaspoon to drizzle the icing over the tops of the cooled cupcakes and sprinkle over the coconut. Add the saved curls of lime zest to decorate.
