Lemon Delicious Puddings
Description
These lemon delicious puddings has a lemon zest flavor sponge with a light and silky lemon curd below. The perfect balance of sweetness and citrus flavor makes these puddings comforting and refreshing. You can also dust sugar on top or add some cream.

Instructions
- Preheat the oven to 160 degree C fan-forced (180 degree C conventional). Grease six 150ml capacity souffle ramekins or pudding dishes with butter.
- Using an electric mixer, beat the 3/4 cup caster sugar and the butter and lemon zest until light and creamy. Add the egg yolks one at a time, beating between each addition. Fold in the flour with a large metal spoon. Add the lemon juice and milk a little at a time and, using the metal spoon, continue to fold in to incorporate fully.
- Using clean beaters, beat the egg whites with the extra 2 tablespoons caster sugar until they form stiff peaks. Fold into the lemon mixture.
- Spoon into the prepared dishes and place in a deep roasting tin. Fill the tin with enough hot water to come halfway up the dishes.
- Bake for 20 minutes. Serve immediately with cream or ice cream, or both!
