Meringue Crowns


Description

This meringue crowns recipe is perfect to enjoy the fruits of this season. These meringue crowns are super crispy on the outside and soft from the inside paired with your favorite fruits.

Instructions

  1. Line a baking sheet with baking parchment and preheat the oven to 110°C (225°F)/ gas 1/4. Separate the egg whites from the yolks.
  2. Whisk the egg whites and salt in a large bowl (using an electric whisk for ease), until they form stiff peaks.
  3. When the egg whites are stiff, whisk 5 tablespoons of the measured sugar into the mixture, 1 tablespoon at a time. Then, fold the remaining sugar into the mixture, using a metal spoon.
  4. Draw 3 circles of 10cm/ 4in diameter (a square works well) onto the parchment paper. Using a piping bag, squeeze out the mixture in a spiral. Pipe the small peaks to create a crown. Three meringues fit a sheet.
  5. Bake on the bottom shelf for 2 hours. Towards the end of the meringue’s baking time, whip the cream till firm (if using) and carefully slice your fruit, and fill the centre of each crown.
